Lentil Lamb Burgers Recipe

Ingredients:

1 cup Red Lentils
1 cup Dried Breadcrumbs
1 tbsp Extra Light Olive Oil
420 g can Sweet Corn Kernels,well drained
2 tsp Crushed Garlic
1 Ultra cube,vegetable
1/2 cup Tzatziki Dip
1 Fresh Mint,finely chopped
Crisp Green Salad, to serve
500 g Lean Lamb Mince

Method:

1. Place lentils,11/2 cups of water and vegetable cube in saucepan.Bring to boil over medium heat. Reduce heat to low and simmer 7 mins or until liquid is absorbed.Remove from heat and cool 10 mins.

2. Combine lentils,garlic,lamb,corn,mint and 1/2 cup crumbs in bowl.Form into patties using Burger Mate.Place remaining crumbs on a sheet of paper towel.Coat patties with crumbs.

3. Heat 1/2 oil in large non-stick pan,over medium heat.Cook patties for 3 minutes each side or until golden brown and cooked through.

4. Serve patties with salad.Top with dollop of Tzatziki dip.
