Lightning Lamb Burgers Recipe

500g (16oz) New Zealand minced lamb
120g jar of pesto sauce
100g (4oz) reduced fat cheddar cheese,grated
Three burger buns
Mixed salad leaves
Tomato slices
Fat free fromage frais
Black pepper.
Instructions:
1. Preheat the barbecue.Tip the lamb mince into a bowl with the pesto and the cheese. Mix well until the pesto and cheese are thoroughly mixed into the mince.(You may find this easier to do with your hands.)
2. Shape mixture into burgers using Burger Mate.Cook on the barbecue for approximately ten minutes, flipping the burgers halfway through until they are completely cooked.
3. Serve in burger buns of your choice with lettuce leaves,slices of tomato,a spoonful of fromage frais and a grinding of black pepper.
